Peach Sorbet + Champagne = Easy Bellinis!!!!
I recently noticed a champagne float on Pinterest where tangerine sorbet was substituted for orange juice in a mimosa. I love this idea! I thought I could do something similar with my favorite champagne drink, the bellini.
A traditional bellini is champagne (or sparkling wine) mixed with peach puree. For this easy cocktail, just swap out the peach puree for some store-bought peach sorbet, or sherbet. I was surprised that peach sorbet was really easy to find, even in mid November. I went to Walmart and found 2 different brands (Haagen Dazs and Great Value).
This drink is best if you can let it rest for a few minutes before drinking. That way the peach sorbet has a chance to start to melt into the champagne.
This sweet drink would be great for a brunch or as a dessert cocktail.
Peach Sorbet and Champagne
- 1/4 cup peach sorbet (or sherbet)
- 6 oz. champagne (or sparkling wine)
Drop a scoop of peach sorbet into a wine glass and top with champagne.
