This easy cucumber salad recipe has cucumbers, tomatoes, and onions in a sweet and tangy vinegar based marinade.

This simple side dish is a great recipe for a barbecue, potluck, or even a busy weeknight dinner.

How To Make Cucumber Salad

  • Add white vinegar and warm water to a large bowl.
  • Add sugar, salt, and pepper.
  • Whisk until the sugar dissolves.

  • Add sliced cucumber, chopped tomatoes, and sliced red onion.

  • Stir to coat the veggies in the marinade.
  • Cover and refrigerate for at least one hour.

  • Strain the liquid from the veggies. Or, serve with a slotted spoon.

How To Store

Store covered in the refrigerator for up to three days. However, this dish is best when served the same day it’s made.

This easy cucumber salad recipe has cucumbers, tomatoes, and onions in a sweet and tangy vinegar based marinade.

Ingredients
 

  • cup white vinegar
  • 1/3 cup warm water
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 English cucumbers peeled and thinly sliced
  • 3 small tomatoes chopped
  • 1/4 red onion thinly sliced

Instructions

  • In a large bowl, add the vinegar, water, sugar, salt, and pepper. Whisk until the sugar is dissolved.
  • Add the cucumber, tomatoes, and onion to the bowl. Stir until the vegetables are well coated in the marinade.
  • Cover and chill in the refrigerator for at least one hour.
  • Strain the liquid. Or, serve with a slotted spoon.
