I used nonfat yogurt in this recipe. That’s because I added peanut butter, which naturally contains plenty of healthy fats. So, this parfait ends up being a fantastic post-workout snack because it’s got protein from the Greek yogurt, healthy fats from the peanut butter, natural sweetness from the maple syrup, and complex carbohydrates/fiber from the fruit.
Maple Peanut Butter Fruit and Yogurt Parfaits recipe
- 3/4 cup plain Greek yogurt (I used nonfat)
- 1 tbsp. creamy peanut butter
- 1 tbsp. pure maple syrup
- 1 cup fresh berries (chopped if necessary)
- In a small bowl, add the yogurt, peanut butter, and maple syrup. Whisk until smooth and well combined.
- Add ½ of the yogurt mixture to a glass or parfait glass. Top the yogurt with ½ of the berries. Repeat the layers.
- Serve cold.
