Apple cinnamon oatmeal bread is slightly sweet, has nice chunks of apples, and the oats give it a great consistency. This makes a hearty, tasty breakfast.

Apple cinnamon oatmeal bread has become a breakfast favorite in my house.  It’s slightly sweet, has nice chunks of apples, and the oats give it a great consistency.  The oats also make it hearty.  I can eat this for breakfast and not be hungry in an hour.  I like to spread a little peanut butter on it for extra protein and flavor.  Who doesn’t love apples and peanut butter?

To make this bread, start by combining the dry ingredients.  Mix oats, flour, sugar, ground cinnamon, salt, baking powder, and baking soda in a large bowl.

Then, combine the wet ingredients.  Mix milk, apple sauce, eggs, canola oil, and vanilla extract in a medium bowl.

wet bread ingredients in a bowlOnce the wet and dry ingredients are prepared, peel and dice two apples.  This will keep them from turning brown.

chopped apples on a cutting boardAdd the wet ingredients, and the chopped apples to the dry ingredients.  Mix until just combined and the flour is moistened.  Do not over-mix or the bread will be tough.  wet bread batter in a bowl

Pour the batter into a prepared loaf pan and bake it at 350 degrees for about an hour.

I like to store mine in an airtight container in the refrigerator.  This way it tastes fresh for about 5-6 days.

Ingredients
 

  • 1 cup quick cooking rolled oats
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tbsp. ground cinnamon
  • 1 1/4 cups skim milk or whatever milk you like
  • ½ cup apple sauce
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 2 tbsp. canola (or your preferred cooking oil)
  • 2 medium apples peeled and diced

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Spray a 9x5 inch loaf pan with cooking spray and set aside.
  • In a large bowl, add the oats, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix until well combined.
  • In a medium bowl, add the milk, apple sauce, vanilla, eggs and oil. Whisk until well combined.
  • Add the wet ingredients and the apples to the dry ingredients. Stir until just combined and all of the flour is moistened. Do not over mix.
  • Pour the batter into the prepared loaf pan. Bake for 55-65 minutes. A toothpick inserted into the center of the bread should come out with moist crumbs, but no raw batter. Cool for 10 minutes in the pan. Then, remove the bread from the pan and place it on a wire rack to cool completely.

  1. This came out great! I cut the sugar to 1/8 cup only and used brown sugar and it was the perfect sweetness for me. I also didn’t have applesauce so increased the milk amount a little (maybe 1 2/3 cup milk) and increased the oil amount to around 1/4 cup. Lastly, I didn’t have a loaf pan so baked it in a large 13×9 cake pan and it was done around 35 min at 350 degrees.

  2. Used 1/2 cup of sugar and mixed in 3 tbsp of ground flax seed for a sweet, nutty flavor.
    Worked out beautifully!

  3. Hi, I really want to make this recipe as it’s the closest and best thing I can find to what I’m looking for. However, I live in China and I can’t buy applesauce. Can you tell me what I can substitute in place of the 1/2 cup of applesauce? I’ve once read that applesauce can be used in recipes in place of oil or butter…can I substitute the opposite way as well? Thanks for your help!

    1. Hi Anna! I haven’t tried this without the applesauce, so I can’t guarantee how it will turn out. If I were going to try it without applesauce, I would try increasing the oil in the recipe to 1/3 cup. Hope this helps 🙂

  4. What could I use to substitute for the sugar? more applesauce?
    This bread sounds good and I’d like to try it, but I’ve never made a bread so I dont really know how to just wing it

    1. Tytiana,

      The simple answer is I’m not 100% sure.

      I assume that you mean you are going to cut the plain oats, sugar, and fresh chopped apples for instant apple cinnamon oatmeal. That’s an interesting idea since the instant oatmeal should already have oats, sugar, and dehydrated apples in it. But, we don’t know exactly how much of each ingredient is in the instant oatmeal. So, it’s hard to say how much you would need to use to get the consistency and flavor of the bread right.

      My GUESS would be to cut the rolled oats, sugar, and apples from the recipe and replace them with 2 cups of apple cinnamon instant oatmeal. But, I have a feeling that this won’t be very sweet. So, you may still need to add some sort of additional sweetener.

      Sorry I don’t have a more precise answer. Hope it works out for you.
